Sunday Prep Day

What’s a wine and pizza loving gal to do to balance out her weeks? Do a big healthy grocery haul and some work week prep.

After last week’s indulgences I wanted to make a point of eating balanced meals all week and fueling some good workouts. I also wanted to make it as easy possible. So I picked up some time savers like these baby hummus packs. I would normally make my own, but thought I’d give it a try this time around.

I was also elated to find these mini olive oil and blasamic packs for salads. I have always stocked up on little bottles of these at the Bon Marche Epicerie in Paris because they’re so much better than you’re usual packaged dressings and great for a picnic, lunch, or in a pinch.

For my milk and eggs, I stocked up on my favourite Greek yogurt, almond milk, whole eggs as well as egg whites to prep a bunch of my spicy egg white muffins.

I picked up this brown rice pasta for dinner – total perfection served on top of a bed of baby kale, tossed in a rich bolognese, and topped with crushed chili peppers and cracked peppers.  I had seconds.

Token grocery items – my favourite salsas. These both have great minimal ingredients and the salsa verde brings a little bite of Mexican heaven to my tortillas, shredded chicken salads, and eggs. If you haven’t tried this on your morning eggs get on it.

As much as I like buying my seafood fresh, some moments call for ease, and these defrosted and marinaded make an easy weeknight salad.

Made up a big batch of these savoury chicken muffins.  Yes I am the muffin man.

I love doing food prep on Sunday afternoons. I find it really relaxing! And it gets my week off to a great start. It’s a good time to experiment with some new recipes too… Especially if you have a couple of hours. Sounds like you are set for a great week ahead!

Woo hoo! Love the convenience-factor. And the Green Mountain salsa. Also one of my faves! I usually prep everything for the evening before instead of one big prep.

Yum, all this food looks fresh and delicious! I love prepping my meals for the week! I’ve never seen that salsa before, I’ll have to be on the lookout for it now!

So smart! Food prep, outfit prep, to-do list prep… makes me feel so much more relaxed for the week. I’d gotten out of meal planning and doing one big shopping for the week, did it yesterday and feel back to my old self! But I don’t do prep like this… it would be smart if I did! (putting it on a to-do list…)

Such a motivating post! I usually do some food prep on Sunday night but since I eat out quite a few lunches during the week, I do some basic food prep for easy dinners (since I come home so late), for healthy snacks and sometimes time-saving breakfast options. I like to cook a batch of brown rice or bake up some sweet potatoes, hard-boil some eggs, buy some baby tomatoes, make some breakfast muffins (LOVE your coconut chocolate muffins, Gillian – they are AMAZING for breakfast :-) ) or some fruit crumble.

I need to get back in the habit of prepping on Sunday…I got a little lazy and just wanted to enjoy my weekends but it helps so much and frees up so much time during the day, esp when you do lunch and breakfast prep..that’s my goal for this coming week!

Those olive oil and balsamic packs are genius. I need to get more organized when it comes to food prep. One thing I can’t stand doing is cooking chicken for my salads. I should just do a bunch of chicken at once and it would save so much time.

If you have a slow cooker I highly recommend doing this shredded chicken – so easy and saves so much time!

this is an AMAZING post on meal planning. inspiring and informative for those that are still trying to get into it!! i love the premade salads. also the idea of the mini packs. that brand of salsa is one of my faves :)
